Air fried Smothered Chicken & Mushroom Gravy with sides

Air fried Smothered Chicken & Mushroom Gravy is a great healthy substitute meal for my family.


We used to eat a lot of fried and starchy meals with minimal nutrients. It wasn't right for digestive health.


At the age of 19, I was diagnosed with Keratoconus eye disease. I received donated eye tissue & cornea transplantation for both eyes. My eyesight and faith were restored.


I was so grateful for this gift that I became an organ donor, donated my body to science, influenced my family & friends to become organ donors, and promised myself to live a healthy lifestyle.

What you will need:



Antibiotic-Free Grass-Fed Boneless Skinless Chicken Breasts, 3-3.0 lb

1 5oz. bag of finely crushed Mac's Salt and Pepper Pork Skins

1 Tsp. Black pepper

1 Tsp. Himalayan pink salt

2 eggs

1/2 c. Twoeavy Whipping Cream

3/4 c. Organic Yucca Root Flour

1 tsp. Organic Garlic Powder

1 tsp. Ground Cumin

1 tsp. Organic Italian Seasoning


Ingredients for Gravy:

1 tsp. Xanthan Gum Non-GMO

1/2 c. Portabella mushrooms

1 tsp. Grass-fed butter

1 c. Vegetable broth


Ingredients for Seasoned & lightly Charred Red Cabbage:

1 Lime

1 tsp. Extra Virgin Olive Oil

1 tsp. Garlic

1 tsp. Himalayan Salt

1 tsp. Pepper


Ingredients for Sauteed Veggie Stuffed Sweet Potato:

1 tsp. of Extra Virgin Olive oil

1 Sweet Potato

1/3 c. Pict Sweet Tri-color Peppers & Onion

1 tsp. Garlic

1 tsp. Himalayan Salt

1 tsp. Pepper


Instructions:

Step 1: Preheat Air Fryer to 350. Line rack with foil.


Step 2: Place pork rinds in a large resealable bag. Seal and remove air from the pack. Use a rolling pin or meat grinder to crush the pork rinds into crumbs. Place crumbs in a bowl.




Step 3: Brush chicken all over with egg wash and sprinkle with seasonings.



Step 4: Place chicken thigh in the crushed pork rinds and press on both sides to coat in crumbs.



Step 5: Add coated chicken to the air fryer. Fry chicken for 45 min or until cooked through.


Step 6: While chicken is in the air fryer, prepare kale, mushrooms & gravy.


Gravy:

In a small saucepan over medium heat, melt grass-fed butter. Whisk in xanthan gum and cook until golden, 1 minute, then whisk in heavy cream. Bring mixture to a boil, reduce heat and simmer kindly until slightly thickened. Stir in fresh herbs, probiotic powder, and mushroom complex. Whisk in 1 cup broth and cook gently—season with —season pepper. Simmer 10 minutes, adding more broth little by little (if gravy is too thick for your liking). Season to taste.


Mushrooms for Gravy:

Use a damp paper towel to brush all dirt from mushrooms. Cutaway and dispose of stems. Dice into 1/4-inch slices for smaller mushrooms. Cut into 1/4-inch cubes for larger mushrooms—Ne—next olive oil in a large skillet over medium heat. Add mushrooms and spread. Cook for 3-5 minutes or until browned on one side. While stirring, cook until mostly golden brown on all sides: Se—season taste with salt and black pepper.


Red Cabbage:

Thoroughly rinse the cabbage in cold water—heat olive oil in a large skillet over medium-high heat. Add garlic and stir quickly to avoid burning. Toss in the cabbage and use a pair of tongs to move it around the skillet. Sprinkle in salt and pepper & squeeze a small amount of like into the skillet. Continue cooking until the cabbage is slightly crisp & charred. Set aside.


Sauteed Veggie Stuffed Sweet Potato:

Clean potato in water and rub extra virgin olive oil on the outside of the potato. Set air fryer to 350 degrees & bake a foil-wrapped sweet potato in the air fryer for 45-55 minutes. After cooking, take the potato out of the air fryer and unwrap. Season to taste. Set to the side.

Place peppers and onions with extra virgin olive oil in a medium heated pan on top of the stove. Add seasonings and saute the vegetables for 10 minutes or until cooked—stuff vegetables into the baked sweet potato.
